New snow storm on 3-8-08
Hi all,
We had another blustery system come through our area dropping 18 inches of the pearly white fluff on us.
It took two shovelings to claim our cars in the back yard. After the first shoveling there was no evidence we had been out there at all with the snow and drifting.
Today is sunny and the temp is 23 going all the way up to 28. Yeeha!

Comfort meatloaf

One thing I love is meatloaf. Here is a recipe I came up with. I usually like to include the brand names. Enjoy!
1 T (Mazola corn oil)
1/4 cup (vadalia onion) coarse chopped
1/4 cup carrots coarse chopped
1 lb. ground chuck
1/2 cup plus 1/4 cup (Heinz ketchup)
1/4 cup (Progresso) garlic and herb bread crumbs
1/4 cup water
1 large egg
1/2 tsp. salt
1/4 tsp. pepper
Pam non-stick spray.
Preheat oven to 350 degrees.
In a small skillet heat 1 T oil. Brown onions and carrots till light golden brown (approx. 10 minutes). Remove from heat and let cool (approx. 5 minutes) Photo A
In a medium bowl combine onion and carrot mix, ground chuck, 1/2 cup ketchup, bread crumbs, water, egg, salt, and pepper. Mix well.
Spray the bottom of your favorite casserole with a non-stick spray. Form meat into a loaf.
Top the meatloaf with remaining 1/4 cup ketchup also covering the sides. Photo B
Bake uncovered for 50 minutes. Remove and let stand 5 minutes before serving. Photo C

The Broken Chain

We little knew that morning, that God was going to call your name.
In life we loved you dearly; in death we do the same.
It broke our hearts to lose you, you did not go alone; for part of us went with you, that day God called you home.
You left us peaceful memories, your love is still our guide; and though we cannot see you, you are always at our side.
Our family chain is broken, and nothing seams the same; but as God calls us one by one, the chain will link again.

Let It Snow!
Hi All,
Merry Christmas in February! We got quite a bit of snow the past two days. A good 8 inches. As everyone knows I love the snow. I will even drive in a blizzard. But lightening will stop me cold.
The trek home from work last night was a slow one, about 15 to 20 mph. I got home about 1am. I spun-out once close to work at a stop sign. The rest of the way home I just glided through them. One thing nice about driving late at night is the roads are empty.
I cross three railroad crossings. One of them is kind of on a hill, as I approached that one I took off my seat belt in case the car would not stop so I could bail.
